• Food & Wine Pairing Recipe – Barrel Select Reserve Shiraz

    Grilled Beef Fillet with Smoked Sweet Potato Mash, Wild Mushroom and Truffle Cream

    This is a quick 30 minute recipe, to pair with Wildekrans Barrel Select Shiraz (Serves 4 people).


    800g Beef Fillet, Trimmed and cleaned

    20 ml Wildekrans Olive Oil

    1 Small Onion, Diced

    1 Clove of Garlic, crushed

    300g Wild Mushrooms

    4 Thyme Sprigs

    2 Generous Sprigs of Rosemary

    ½ a Lemon

    10 ml Truffle oil

    2 Large Sweet Potatoes, peeled and cut into 4 equal pieces per unit

    500ml Cream

    100 g of Butter (Preferably unsalted)

    4 Rooibos Tea Bags

    Salt & Cracked Black Pepper


    Place the sweet potato into a sauce pot and cover with salted water. Place the pot on a medium heat and simmer until the potatoes are soft, but not falling apart. Strain the potatoes trying to keep them as intact as possible.

    Then, empty the Rooibos tea bags into your most undesirable oven tray (at least 1 inch deep), and add 2 sprigs of thyme. Then place a wire rack on the top of the tray, making sure that there is some clearance between the tea and the tray. Add the potatoes onto the rack and add 1- 2 drops of water. Cover the tray completely with tinfoil. Place the tray on a high heat for 2 minutes. You will have this delightful smell of burning Rooibos and Thyme filling your kitchen. Remove the tray from the heat and carefully remove the sweet potatoes.

    In a separate sauce pot, place 80g of the butter and 250ml cream and heat over a moderate heat. Use this liquid to mash the sweet potato and season. You might not need all of the cream mixture, this all depends how you like your mash.   

    Heat a cast iron grill pan to smoking point (or even better, use a charcoal grill). Cut the Fillet into 4 equal portions. Season generously with salt and cracked black pepper. The pepper brings a nice spice element, which works very well with Shiraz.

    Place the fillet steaks on the grill, taking care not to move the meat too much – you want to retain all those lovey juices. Then add the olive oil to a sauté pan with the rosemary sprigs, clove of garlic and 20g of Butter, and heat for 2 minutes on a moderate heat. Then set aside, to be used later. Once the fillet is cooked to your desired temperature, remove the steaks and let them rest in the olive oil & butter liquid. Turn the steak every few minutes to distribute the meat juices through the whole steak.

    Place a saute pan on a high heat , add some of the olive oil and butter mixture, and saute the diced onion until translucent, then add the wild mushrooms and fry over a high heat. Run your fingers through the 2 sprigs of thyme and let the leaves fall into the mushrooms. Add the cream and simmer the sauce until the cream has reduced by half. Season with salt and pepper, and you are ready to go.

    Top Tip: “I usually squeeze some juice from half a lemon over the steaks, give it one more turn and the steaks are ready to go. And if you really want to pimp the sauce up, then add some more of the juice that is left from the meat resting liquid. You are now ready to plate your 4 dishes and open your second Bottle of Wildekrans Barrel Select Reserve Shiraz.”

  • Rather postpone and please don’t cancel

    It’s possible that we have heard the words ‘pandemic’, ‘unprecented’, ‘lockdown’ and ‘covid-19’ enough times to last us a lifetime – and it certainly feels like we’ve experienced a lifetime of challenges in the last few months.

    While things remain uncertain and precarious, we’re certainly chomping at the bit for the days when we can welcome visitors to our estate again. When our cottages will be filled with the sounds of laughter, when the joyful sounds of a wedding party will fill the evening air, and when people can simply just enjoy a great country escape with us again.

    That is why we are fully supportive of the #postponedontcancel campaign that is growing momentum in the hospitality industry. Therefore, we ask you to please not cancel any bookings you may have with us during these uncertain times, but to rather postpone them to a future date.

    To try and help you with this, we have made our cancelation terms more flexible, which will also help us to help those whose jobs depend on the survival of the tourism and hospitality arm of our business:-

    Existing bookings:

    1.       Confirmed bookings for which we have received a deposit or full payment, will be secured until such time as you are comfortable to travel again.

    2.       Bookings can be amended up to 15 (fifteen) months from the original arrival date. Please note only one amendment to travel dates may be made and should the season change to a higher rate season, the new rate may apply to the cost of certain items if included in package rates. We will do our utmost to retain accommodation rates at the same level as the date of the original booking.

    3.       In the event that you do not travel within 15 (fifteen) months of the original arrival date, the deposit/payment will be fully refunded less the original administration fee and any banking charges incurred by the refund.

    4.       The above will only apply if we have received the required deposit or the full payment to confirm your reservation.


    We will have the following exceptions where bookings are cancelled within 14 days of travel, whereby clients will be offered the same deferral policy as above:

    1.       If the country of the clients’ residence prevents the client from leaving.

    2.       If South Africa prolongs an inbound travel ban, banning clients from entering, or forcing arriving clients into quarantine.


    1.       In order for us to ride out this storm as a privately owned business, we are unable to offer any refunds at this time.

    2.       We trust that our partners and guests understand our situation. We are doing all we can to work with our guests and partners to find mutually agreeable solutions.

    3.       This step is necessary to ensure that our business can continue to operate through these difficult times so that we will be here for you when the dust settles. 

    4.       We reserve the right to make changes to these new terms and conditions at any time. 

    5.       As soon as the pandemic has been contained, and lockdown restrictions have been removed, we will revert back to our original terms and conditions for bookings.

  • Red Bull Conference

    Late in November 2019, we posted on social media that our estate was off-limits for a week. We couldn’t give any further info at the time. Recently, we were very excited to receive the set of official photographs, thereby allowing us to share a very exciting week with you!

    We were the very proud hosts of the Red Bull Staff Conference and Team-Building event for 150 people!

    With two full days to set up in collaboration with the Red Bull Events Team and The Beanstalk Events Company, a fantastic vision came together, totally transforming and customising the space, creating different areas for different purposes – a ‘campus’ type concept.

    All guests were accommodated in tents for a true glamping experience, and it was fantastic housing them near the action, as they were able to explore the different areas and arrive at certain activities by foot – thereby eliminating time-consuming and costly transport of such a large number of delegates from point to point. Bathroom / shower facilities were accommodated in our cottages, as well as via extra facilities that were hired. Our Tasting Room was converted into a drinks / snacks venue, complete with a gaming station, and the entire campus was able to accommodate Red Bull branding, therefore allowing them to fully claim the space. Marquees were also set up in various areas for dining, and for a secret party!

    When it came to activities, we had so much fun! The delegates all had complete flexibility before breakfast to go for early morning runs around our estate. The conference followed after breakfast each day, and then the afternoons were left for organised activities such as obstacle courses, team building activities around our pool and other farm landmarks, a secret party, gala dinner, and a surprise Red Bull plane fly over!

    Now, when it comes to food and catering, we get really passionate, so we asked Emma, our Hospitality Manager, to list some of the catering highlights:-

    • Day 1 – Build a burger bar
    • Evening 1 – Gala awards dinner – Canapes to start, platters on the tables followed by a 2 course meal and a sweetie table to end.
    • Every morning started with a full buffet breakfast with all the trimmings.
    • Day 2 – Braai (barbecue) on the lawn of the Tasting Room where guests could enjoy the benches, lawns and informal areas that had been set up.
    • Evening 2 – Party night on a hidden location of our farm, with food trucks from outside caterers.
    • On all days there were regular tea/coffee breaks with a sweetie table that was always available.

    And when asked about the overall highlights of the conference, this is what Emma had to say:-

    “The Gala Dinner with Siya Kolisi as the guest had to be the ultimate highlight!  Such a fun evening. The team building on the farm and in the river and between the vineyards was also brilliant. Another highlight was The Unforeseen party – such a great party! This was housed in a clear marquee on another part of the farm and was a total surprise for the delegates!  Everyone was transported to the party site in a safari vehicle, horse and carriage and other forms of transport.  They had confetti canons, and roller girls and all kinds of fun things!!! Amazing! We loved all the tents too!  The cottages were used for bathroom and lounge areas and then all the guests stayed in the tents on the lawn (a great gees!).”

    Then lastly, the biggest highlight had to be the people, to whom we owe our thanks:-

    “The guests – they were a great group of people, fun, energetic, friendly and polite!  A pleasure to serve.

    The companies we worked with – Red Bull Events Team and Beanstalk – they made it fun and easy work!”

    Thank you to everyone for an unforgettable experience. We loved every moment and hope to host many more events like this in the future again!
